White chocolate cheesecake what’s not to like about that sentence? I personally love a good cheesecake but unfortunately for me I cannot cook or bake to save my own life! My boyfriend is definitely the chef of the household and would do the majority of the cooking but I asked if he could teach me a simple cheesecake recipe that I could make myself. This has to be one of the easiest and tastiest cheesecakes I’ve had in a long time and I’m genuinely impressed with myself for pulling it off! Not only is it really simple to make but more importantly you can get all of the ingredients under €7 from you local Lidl! This has served us well during the festive season, prepared and served in just a few hours ready to feed the entire family.
Loose bottom cake tin
Plastic food bag
1 pack of digestive biscuits €0.45
Butter 3/4 tbsp (usually in fridge)
Natural cream cheese spread x 3 – €0.99 each
Plain white chocolate x 3 – €0.79 each
Fresh cream small – €1.19
For added goodness you can pair with a raspberry or blueberry coulis
A squeeze of lemon juice
3 teaspoons of sugar & 3 tbsp of water
Reduce in a pot over a medium heat for a few minutes, take out and lightly blend until smooth. Once blended heat again for roughly 30 seconds and transfer to a bowl and allow it to cool in room temperature for a few minutes. Allow the coulis to set and thicken in fridge for a few hours, once set pour over cheesecake and enjoy.
Melt 3/4 tbsp of butter in a glass bowl over heat
Put half a pack of digestive biscuits into a clear plastic bag and begin crushing with a rolling pin until you get a crumble consistency
Once the butter is melted combine with the biscuits and mix well
Even out mixture to the bottom of the cake tin until it is sitting flat
Chill in freezer for 10-15 minutes while you prepare the rest
Melt 3 packs of chocolate in a glass bowl over heat
Once melted and smooth get a large bowl and add in the cream cheese
Whip up the cream and combine the cheese, chocolate and cream together and mix well
Take out the base from the freezer and spread out the mixture onto the biscuit base
Allow to set in the fridge for roughly 3-4 hours
The longer it’s left in the fridge the better the flavors and texture will be.
